It’s another family pancake breakfast this morning and we’re enjoying them totally grain-free! Read below to find out how you can make pancakes with absolutely no grains!
Instead of your regular flour, use an alternative grain free flour of your choice, it’s that simple! My favourite alternative is almond flour – the texture and taste are perfect. A couple of others you could try are coconut flour or chestnut flour. Below is my go to favourite pancake recipe:!
- 4 eggs
- 2 ripe mashed bananas
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1 tsp pure vanilla extract
- pinch of sea salt
- Stir all ingredients together (I like to whisk the egg whites separately to make extra fluffy pancakes but this is optional)
- Then ladle into a hot pan with a small amount of coconut oil or butter. Flip over once you see bubbles forming on the surface then cook for another minute or two depending on thickness of the pancake.
